In the South, there sometimes seems no place more omnipresent than Waffle House, with its yellow-and-black signs surfacing near interstate exits, dotting night life districts and showing up in wealthy suburbs and run-down rural towns alike.<\/span><\/p>\n

The ubiquity, cultivated over decades of syrup-soaked waffles and strong coffee, makes the 24-hour chain\u2019s booths and barstools a round-the-clock reflection of the South and invites every kind of story, some chronicled on Instagram, others in mug shots.<\/span><\/p>\n

\u201cThere are the drunk Waffle Houses, the late-night Waffle Houses, Waffle House as a house of freaks, but there\u2019s also this kind of nurturing, idealistic vision of Waffle House,\u201d said John T. Edge, the University of Mississippi scholar of Southern cuisine and culture, who proudly rattled off how his regular order involves three eggs, scrambled with cheese, and grits.<\/span><\/p>\n

This week, Waffle Houses hundreds of miles apart were at the center of a fatal tragedy and a national controversy: Southeast of downtown Nashville, a gunman opened fire and killed four people, and in southern Alabama, near Mobile, a confrontation between a black woman and white police officers over access to cutlery renewed debates about race and police conduct.<\/span><\/p>\n

Hours after Sunday\u2019s shooting in Tennessee, a woman gave birth in a Waffle House parking lot.<\/span><\/p>\n

\u201cWe\u2019re a melting pot, we\u2019re a meeting place, and we\u2019re here to serve the public,\u201d Joe Rogers Jr., Waffle House\u2019s chairman, said in an interview on Wednesday at the restaurant that was attacked this week.<\/span><\/p>\n

Even before the rampage, which also left four people wounded, it was not hard to find accounts of other Waffle House shootings. There was one last spring in Ohio, one in North Carolina in October, another in Mississippi in December, and January killings in Florida and Missouri.<\/span><\/p>\n

\u201cIt is a public square of an off-ramp somewhere off I-20 for everybody, and if it\u2019s a public square, you should see marriage proposals, you should see births, you should see squabbles,\u201d Mr. Edge said. \u201cYou should watch a buddy movie come into focus at a Waffle House.\u201d<\/span><\/p>\n

Brawls, like the one the singer Kid Rock was involved in about a decade ago, are publicly greeted with more of a shrug than surprise, and robberies are hardly unthinkable. In 2011, four men who regularly ate together at a Waffle House in Georgia were arrested, accused of plotting attacks on government buildings. Seeking leniency for one defendant, a lawyer asked a judge to \u201csee the case for what it was \u2014 a group of old men at the Waffle House who took their talk too far.\u201d<\/span><\/p>\n

Waffle House, a chain of more than 1,800 eateries, has also faced multiple lawsuits from customers complaining about racist treatment from employees. Some plaintiffs said that restaurant workers used racial epithets and ignored black guests while catering to white customers, and the chain\u2019s restaurants have tangled several times with the Equal Employment Opportunity Commission, which serves as a discrimination watchdog.<\/span><\/p>\n

The company has long rejected allegations of racial bias, and its laminated menus used to offer a more wholesome version of history than the one critics raise: \u201cAmerica\u2019s Place to Work, America\u2019s Place to Eat.\u201d<\/span><\/p>\n

Although officials were still reviewing the episode between the black woman and the white police officers in Saraland, Ala., Waffle House said in a statement this week that it believed \u201cpolice intervention was appropriate.\u201d<\/span><\/p>\n

\u201cWe take this matter very seriously and think it is important for all those involved or interested in the matter to exercise caution until the facts are developed,\u201d the company said.<\/span><\/p>\n

Waffle House has also long been sensitive to concerns about safety at its restaurants, fears that gained new traction after Sunday\u2019s shooting.<\/span><\/p>\n

\u201cWe keep control of the restaurants pretty well,\u201d said Mr. Rogers, a name badge on his shirt that said he had been a \u201cteam member since 1961.\u201d<\/span><\/p>\n

Waffle House is a place where newly married couples sometimes stop, still tuxedoed and gowned, after their weddings. Parents will occasionally catalog a child\u2019s first waffle as if it were the tooth fairy\u2019s inaugural drop by. Kim Kardashian, Kanye West, John Legend and Chrissy Teigen went on a double date dressed in evening wear at a Waffle House in 2015, and last year, Bruno Mars celebrated his music video release there. In 1997, the governor of Alabama wondered aloud whether the state should look to improve its efficiency and consistency by studying Waffle House\u2019s operations.<\/span><\/p>\n

Waffle House jukeboxes play in-house hits like \u201cThere Are Raisins in My Toast,\u201d but the restaurant\u2019s soundtrack is really clanging dishware and servers shouting orders to grill cooks. There is a lexicon for the near ritual ordering of hash browns. (A regular order scattered, smothered, covered and capped \u2014 that is, with onions, cheese and mushrooms \u2014 will set you back a few bucks and 275 calories.) A T-bone can be had at sunrise, and a plate of maybe-a-bit-burned bacon is yours at sundown, the tab always calculated on a yellow slip.<\/span><\/p>\n

The company, founded in 1955 near Atlanta, is privately held and far smaller than many of its rivals. IHOP claims 1.5 percent of the full-service dining market share by sales, while Denny\u2019s takes 1.3 percent, according to Euromonitor, a market research firm. Waffle House has 0.6 percent.<\/span><\/p>\n

Still, there is plenty of money to be had: Roughly 17 percent of all chain restaurant revenue in the country is derived from companies that specialize in pancakes, waffles, omelets, French toast and other breakfast items, according to IBISWorld, a market research firm.<\/span><\/p>\n

But statistics and numbers rarely seem to matter at Waffle House. It was especially so in Nashville on Wednesday as Store No. 2267 reopened, the shattered windows replaced and the bloodstains wiped away. The grill crackled. The coffee cups clinked. The servers called out orders through the somberness that still hung in the air.<\/span><\/p>\n

\u201cToday\u2019s a very unusual day,\u201d one waitress said softly. \u201cIt will be different tomorrow.\u201d<\/span><\/p>\n

A woman cradling a newborn walked into the restaurant a few minutes later. The woman began to cry.<\/span><\/p>\n
